Many people have a hard time going to celebrations because they’re on a diet and sometimes the hostess didn’t think of offering salad dishes.
So giving your guests the option of eating salads in the shower menu is a great idea that will be appreciated.
I wanted to share a tasty, refreshing recipe that happens to be one of my favorites: pesto pasta salad.
This recipe is just like a regular pasta salad except that the pasta is coated in a delightful pesto sauce.
Pesto is a pretty green sauce made from basil, pine nuts, garlic, Parmesan cheese, and olive oil. Although it’s usually served with pasta, you can also serve it with a variety of things, like chicken, vegetable trays, and fish. It tastes delicious on pretty much everything. It’s a quick and easy dish to prepare.
A little goes a long way, so it’s cost effective, and you don’t have to feel bad about contributing to bad health, because this pasta salad is actually nutritious, especially if you used whole grain pasta. What you will need for the pesto sauce:
• ¼ cup pine nuts
• 4 cloves garlic
• 1 – 1 ½ cup fresh basil leaves
• 1/2 cup extra virgin olive oil
• 1/4 cup freshly grated Parmesan cheese
• Salt and Pepper
How to make the pesto sauce:
In a food processor or blender, add the pine nuts, garlic, basil, Parmesan cheese, salt, and pepper. Here’s a small piece of advice, it is a good idea to roughly chop your garlic before adding it into the blender. This way, you avoid having chunks of garlic in your sauce, and because this sauce isn’t cooked, not having chunks of garlic is a very good thing.
Add the olive oil in a steady stream while the blender or food processor is on. Once everything is combined into a nice green puree, it’s ready to go over your pasta salad. So now let’s talk about the rest of the salad.
What you will need for the pasta salad:
• 1 lb. pasta (rotini or penne are my preferred pasta’s for salad)
• ¼ cup of parsley, chopped
• 2 tablespoons freshly squeezed lime juice
• 1 red bell pepper, finely chopped
• 1 orange bell pepper, finely chopped
• 1 cup tomatoes, finely diced
• 1 cup chicken, finely diced
How to make the pasta salad:
Bring a large pot of water to a boil. You’ll want to add salt to your water to give flavor to the pasta. Add the pasta to the water and cool it for about 10-12 minutes, or until you see that it’s tender. Drain pasta. I usually rinse my pasta so that it cools faster, however some people are avidly against doing this because it washes off some of the excess starch that makes the sauce stick to the pasta more easily.
I personally don’t care that some starch is washed off, but you should do what you feel is best. In a large bowl, combine all the ingredients and the pesto sauce you made earlier, and toss the salad. Put your pesto pasta salad in a crystal or glass bowl. Adorn your foods’ table with beautiful baby shower table decorations. The end result will be truly amazing.
